Ingredients
- 2 medium tart apples (such as Granny Smith)
- 1/4 cup granulated sugar
- 1 tsp cinnamon (optional)
- 1 package puff pastry sheets (thawed if frozen)
- 1 egg (beaten)
Instructions
- Peel, core, and dice the apples into small cubes, placing them in a mixing bowl.
- Sprinkle granulated sugar and cinnamon over the apples, tossing to coat evenly; let sit for 5 minutes.
- Heat a skillet over medium heat, add apples and their juices, cooking until tender and slightly caramelized (about 8-10 minutes).
- Remove from heat and cool slightly.
- Roll out puff pastry sheets and cut each into four squares.
- Place a spoonful of apple filling in the center of each square, fold over to form a triangle or rectangle, and crimp edges to seal.
- Brush tops with beaten egg.
- Arrange empanadas on a baking sheet and bake in a preheated oven at 400°F (200°C) for about 20-25 minutes, or until golden brown.
