It looks impressive but is surprisingly simple to prepare, making it perfect for a weeknight dinner.
Ingredients
- 2 pounds boneless, skinless chicken thighs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 cup apple cider
- 1/4 cup Dijon mustard
- 3 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, and garlic powder.
- In a small bowl, whisk together the apple cider, Dijon mustard, brown sugar, apple cider vinegar, and red pepper flakes if using. This creates your apple cider glaze.
- Place the seasoned chicken thighs on the prepared baking sheet.
- Brush about half of the apple cider glaze generously over the chicken thighs.
- Bake for 20 minutes.
- Remove the baking sheet from the oven. Brush the remaining apple cider glaze over the chicken.
- Return to the oven and bake for another 10-15 minutes, or until the chicken is cooked through and the glaze is caramelized and sticky.
- Serve your delicious apple cider glazed chicken immediately.
Notes
- For a spicier glaze, increase the red pepper flakes.
- You can use chicken breasts instead of thighs, but adjust the baking time.
- Serve with your favorite side dishes for a complete apple cider chicken dinner.
