Ingredients
- 4 cod fillets
- 1 can (13.5 oz) coconut milk
- 1 lemon (zested and juiced)
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix coconut milk, lemon zest, lemon juice, minced garlic, salt, and pepper.
- Place the cod fillets in a baking dish and pour the coconut lemon sauce over them.
- Drizzle olive oil on top of the fillets.
