Ingredients
- 6–8 medium banana peppers
- 1 pound ground meat (beef, turkey, or chicken)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 (15-ounce) can diced tomatoes, undrained
- 1/2 cup cooked rice (brown or white)
- 1/4 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1 teaspoon dried Italian seasoning
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the banana peppers by cutting off the tops and removing the seeds.
- In a skillet, cook the ground meat over medium heat until browned. Drain excess fat.
- Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
- Stir in the diced tomatoes, cooked rice, shredded cheese, Italian seasoning, salt, and pepper. Mix well.
- Stuff the banana peppers with the meat mixture and place them in a baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
- Remove from the oven and let cool slightly before serving.

- For a vegetarian version, substitute ground meat with plant-based crumbles.
- Fire-roasted diced tomatoes can enhance the flavor.
