  • 68 medium banana peppers
  • 1 pound ground meat (beef, turkey, or chicken)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes, undrained
  • 1/2 cup cooked rice (brown or white)
  • 1/4 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the banana peppers by cutting off the tops and removing the seeds.
  3. In a skillet, cook the ground meat over medium heat until browned. Drain excess fat.
  4. Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
  5. Stir in the diced tomatoes, cooked rice, shredded cheese, Italian seasoning, salt, and pepper. Mix well.
  6. Stuff the banana peppers with the meat mixture and place them in a baking dish.
