Ingredients

  • 1 pound ground venison
  • 1 cup fresh blackberries
  • 4 slices beef bacon
  • 4 brioche burger buns
  • 4 ounces brie cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup arugula

Instructions

  1. Preheat your grill or stovetop grill pan to medium-high heat.
  2. Cook the beef bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
  3. In a large bowl, combine ground venison, garlic powder, salt, and black pepper. Mix gently until combined.
  4. Form the venison mixture into four equal patties.
  5. Brush the patties lightly with olive oil.
  6. Grill the patties for 4-5 minutes on each side, or until desired doneness.
  7. While the patties cook, slice the brie cheese into thin slices.
  8. In a small bowl, mix mayonnaise, Dijon mustard, and honey until smooth. Set aside.
  9. Lightly toast the brioche buns on the grill for 1-2 minutes.
  10. Place a slice of brie on each venison patty during the last minute of cooking to melt slightly.
  11. Assemble the burgers: spread the honey mustard mayonnaise on the bottom half of each bun, add arugula, place the venison patty with melted brie, top with fresh blackberries and crispy bacon, then cover with the top half of the bun.
  12. Serve the blackberry bacon venison burgers immediately.
