Ingredients
- 2 naan flatbreads
- 1 tsp olive oil
- 1 cup thinly sliced red onion
- Kosher salt to taste

- 2 tbsp honey
- 1/2 cup ricotta cheese
- 1/2 cup feta cheese
- 1 cup blueberries
- Handful micro arugula or regular baby arugula
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange naan flatbreads on the sheet and lightly brush with water.
- Heat olive oil over medium-low heat in a pan. Add red onions, salt, and red pepper flakes. Cook for 3-5 minutes until soft.
- Stir in honey and caramelize with the onions. Remove from heat.
- Combine ricotta and feta cheese in a small bowl.
- Spread the cheese mixture evenly over each naan.
- Top the cheese with caramelized onions.
- Scatter blueberries evenly over the onions.
- Bake for about 10 minutes until cheese softens and blueberries begin to burst.
- Remove from oven and top with micro arugula. Serve warm.
