Description

Ingredients

  • 2 naan flatbreads
  • 1 tsp olive oil
  • 1 cup thinly sliced red onion
  • Kosher salt to taste
  • Pinch red pepper flakes
  • 2 tbsp honey
  • 1/2 cup ricotta cheese
  • 1/2 cup feta cheese
  • 1 cup blueberries
  • Handful micro arugula or regular baby arugula

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Arrange naan flatbreads on the sheet and lightly brush with water.
  3. Heat olive oil over medium-low heat in a pan. Add red onions, salt, and red pepper flakes. Cook for 3-5 minutes until soft.
  4. Stir in honey and caramelize with the onions. Remove from heat.
  5. Combine ricotta and feta cheese in a small bowl.
  6. Spread the cheese mixture evenly over each naan.
  7. Top the cheese with caramelized onions.
  8. Scatter blueberries evenly over the onions.
  9. Bake for about 10 minutes until cheese softens and blueberries begin to burst.
  10. Remove from oven and top with micro arugula. Serve warm.
