Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 cup oat flour
  • 1/4 tsp baking powder
  • 1/2 cup fresh or frozen blueberries
  • Pinch of salt
  • Butter or oil, for greasing

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a small baking dish.
  2. In a mixing bowl, whisk together cottage cheese, eggs, maple syrup (or honey), vanilla extract, and cinnamon until smooth.
  3. Stir in oat flour, baking powder, and a pinch of salt until fully combined.
  4. Gently fold in the blueberries.
  5. Pour the mixture into the greased baking dish and spread evenly.
  6. Bake for 30–35 minutes or until the center is set and the top is golden.
