Ingredients
- 1 cup cottage cheese
- 2 eggs
- 1/4 cup maple syrup or honey
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 cup oat flour
- 1/4 tsp baking powder
- 1/2 cup fresh or frozen blueberries
- Pinch of salt
- Butter or oil, for greasing
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a small baking dish.
- In a mixing bowl, whisk together cottage cheese, eggs, maple syrup (or honey), vanilla extract, and cinnamon until smooth.
- Stir in oat flour, baking powder, and a pinch of salt until fully combined.
- Gently fold in the blueberries.
- Pour the mixture into the greased baking dish and spread evenly.
- Bake for 30–35 minutes or until the center is set and the top is golden.
- Let cool slightly before serving. Enjoy warm or chilled.
Notes
- Can substitute honey with maple syrup for a vegan option.
- Use fresh blueberries for the best flavor, but frozen will work as well.
- Store leftovers in the refrigerator for up to 3 days.
