Ingredients

  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 cup packed brown sugar
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 2 large eggs
  • 1/2 cup unsalted butter, softened
  • 1 cup butterscotch chips
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. Grate zucchini and squeeze out excess moisture using a clean towel.
  3. In a bowl, whisk together flour, baking powder, cinnamon, and salt.
  4. In another bowl, cream together butter and brown sugar until fluffy; beat in eggs one at a time.
  5. Stir in grated zucchini and then gradually combine wet and dry ingredients; fold in butterscotch chips.
  6. Pour batter into the prepared pan and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  7. Allow to cool completely before cutting into squares.
