Ingredients
- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 cup packed brown sugar
- 1 cup all-purpose flour
- 1/2 tsp salt
- 1 tsp baking powder
- 2 large eggs
- 1/2 cup unsalted butter, softened
- 1 cup butterscotch chips
- 1/2 tsp ground cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- Grate zucchini and squeeze out excess moisture using a clean towel.
- In a bowl, whisk together flour, baking powder, cinnamon, and salt.
- In another bowl, cream together butter and brown sugar until fluffy; beat in eggs one at a time.
- Stir in grated zucchini and then gradually combine wet and dry ingredients; fold in butterscotch chips.
- Pour batter into the prepared pan and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
- Allow to cool completely before cutting into squares.
Notes
- Make sure to squeeze out as much moisture from the zucchini as possible for better texture.
