Ingredients

  • 3 medium Zucchini
  • 1 tablespoon Olive oil

  • 8 oz Fresh mozzarella balls (bocconcini)

  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 clove Garlic

  • Toasted pine nuts (optional)
  • Red pepper flakes (optional)
  • Lemon zest (optional)

Instructions

  1. Spiralize 3 medium zucchini into long ribbons. Sprinkle lightly with salt and let them rest on paper towels for 5 minutes to draw out moisture.

  4. In a spacious bowl, gently combine the sautéed zucchini noodles, 1 cup halved cherry tomatoes, 8 oz mozzarella balls, and a handful of torn basil leaves.
  5. Pour the prepared dressing over the salad and toss gently until everything is coated. Let the flavors marry for 2–3 minutes before serving.
