Ingredients

  • 1 cup warm water (105115 degrees F)
  • 2 and 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar

  • 1 large egg
  • 3 and 1/2 cups all-purpose flour, plus more for dusting
  • 1 cup shredded mozzarella cheese
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let sit for 5-10 minutes until foamy.
  2. Stir in melted butter, egg, and salt. Add flour and mix until a shaggy dough forms.
  3. Knead the dough for 5-7 minutes in a stand mixer with a dough hook, or 8-10 minutes by hand, until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. Punch down the dough and divide it into 12 equal pieces.
  6. Shape each piece into a ball and flatten slightly. Stuff each ball with mozzarella cheese, then reshape into a ball, ensuring the cheese is enclosed.
  7. Arrange the stuffed dough balls in a greased 9×13 inch baking pan.
  8. In a small bowl, combine softened butter, minced garlic, Parmesan cheese, and parsley.
  9. Brush the garlic butter mixture generously over the top of each dough ball.
  10. Cover the pan and let the rolls rise for another 30-45 minutes.
  11. Preheat your oven to 375 degrees F (190 degrees C).
  12. Bake for 18-22 minutes, or until golden brown and cooked through.
