Ingredients
- 1 lb ground beef or turkey
- 4 medium potatoes, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef or vegetable broth
- 1 cup milk or cream
- 2 cups shredded cheddar cheese
- 2 tbsp butter
- 2 tbsp flour
- Salt and pepper to taste
- Optional: paprika, thyme, bacon bits, carrots, celery, sausage
Instructions
- Brown the ground beef in a large pot over medium heat. Drain excess fat and set aside.
- Melt butter in the same pot. Add chopped onion and minced garlic. Sauté for 3-5 minutes until softened.
- Add diced potatoes and broth to the pot. Bring to a simmer, cover, and cook for 15-20 minutes, or until potatoes are tender.
- While potatoes cook, melt butter in a small saucepan. Whisk in flour until smooth. Gradually whisk in milk or cream until thickened.
- Stir the cream sauce into the potato mixture. Add the browned beef back to the pot.
- Gradually stir in shredded cheddar cheese until fully melted.
- Season with salt and pepper to your liking. Serve hot.
