Ingredients

  • 1 lb ground beef or turkey
  • 4 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef or vegetable broth
  • 1 cup milk or cream
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp flour
  • Salt and pepper to taste
  • Optional: paprika, thyme, bacon bits, carrots, celery, sausage

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain excess fat and set aside.
  2. Melt butter in the same pot. Add chopped onion and minced garlic. Sauté for 3-5 minutes until softened.
  3. Add diced potatoes and broth to the pot. Bring to a simmer, cover, and cook for 15-20 minutes, or until potatoes are tender.
  4. While potatoes cook, melt butter in a small saucepan. Whisk in flour until smooth. Gradually whisk in milk or cream until thickened.
  5. Stir the cream sauce into the potato mixture. Add the browned beef back to the pot.
  6. Gradually stir in shredded cheddar cheese until fully melted.
