Ingredients
- 1 can (10.5 oz) cream of chicken soup with herbs
- 16 oz sour cream
- 2 ½ cups chicken broth
- 5 cloves garlic, minced
- 1 tsp all-purpose seasoning
- ½ tsp salt
- 1 tsp freshly cracked black pepper
- 3 cups fresh spinach, torn (or 1 box frozen, thawed and drained)
- 16 oz dry orzo pasta
- 3 cups Monterey Jack cheese, grated, divided
- 2 cups cooked shredded chicken
- 1 small can (6 oz) crispy fried onions
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch casserole dish.
- In the casserole dish, whisk together the cream of chicken soup, sour cream, and chicken broth until smooth. Stir in minced garlic, all-purpose seasoning, salt, and pepper.
- Add the torn spinach, shredded chicken, dry orzo, and half of the grated cheese to the casserole dish. Stir until all ingredients are evenly coated with the sauce.
- Sprinkle the remaining cheese over the top, followed by an even layer of crispy fried onions.
- Cover the casserole with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and golden brown, and the edges are bubbling.
