Ingredients

  • 1 can (10.5 oz) cream of chicken soup with herbs
  • 16 oz sour cream
  • 2 ½ cups chicken broth
  • 5 cloves garlic, minced
  • 1 tsp all-purpose seasoning
  • ½ tsp salt
  • 1 tsp freshly cracked black pepper
  • 3 cups fresh spinach, torn (or 1 box frozen, thawed and drained)
  • 16 oz dry orzo pasta
  • 3 cups Monterey Jack cheese, grated, divided
  • 2 cups cooked shredded chicken
  • 1 small can (6 oz) crispy fried onions

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch casserole dish.
  2. In the casserole dish, whisk together the cream of chicken soup, sour cream, and chicken broth until smooth. Stir in minced garlic, all-purpose seasoning, salt, and pepper.
  3. Add the torn spinach, shredded chicken, dry orzo, and half of the grated cheese to the casserole dish. Stir until all ingredients are evenly coated with the sauce.
  4. Sprinkle the remaining cheese over the top, followed by an even layer of crispy fried onions.
  5. Cover the casserole with foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and golden brown, and the edges are bubbling.
