A delicious and creamy Cheesy Zucchini Casserole that is perfect for a comforting meal.
Ingredients
- 4 medium zucchinis, sliced
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine sliced zucchinis, garlic, salt, pepper, and oregano.
- Add sour cream and mix well.
- Stir in cheddar cheese and half of the Parmesan cheese.
- Transfer the mixture to a greased baking dish.
- Top with breadcrumbs and remaining Parmesan cheese.
- Bake for 30-35 minutes or until the top is golden brown and bubbly.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add red pepper flakes.
- Can be made ahead of time and stored in the refrigerator before baking.
- Feel free to substitute other cheeses for a different flavor.
