Description

Chicken Aguadito is a delicious and hearty Peruvian chicken soup that combines tender chicken, fresh vegetables, and vibrant flavors.


Ingredients

  • 1 lb chicken breasts (boneless and skinless)
  • 4 cups chicken broth
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 cup green peas
  • 1 cup diced potatoes
  • 1 cup corn kernels
  • 1 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Optional toppings: Avocado slices, Queso fresco for topping

Instructions

  1. In a large pot, add chicken breasts and cover them with chicken broth. Bring to a boil and squeeze in the juice of half a lime. Reduce heat and let simmer for 20 minutes until the chicken is cooked through.
  2. In a separate pan, heat a little oil over medium heat. Add the diced onion and garlic. Sauté until soft and fragrant, about 5 minutes.
  3. Remove the chicken from the broth and shred it into bite-sized pieces. Return the shredded chicken to the pot, along with the sautéed onion and garlic.
  4. Stir in the diced potatoes, corn, green peas, and the remaining lime juice. Season with salt and pepper. Let everything simmer together for about 10-15 minutes, or until the potatoes are tender.
  5. Before serving, stir in the fresh cilantro for that vibrant flavor kick.
  6. Ladle the Aguadito into bowls and top with avocado slices and crumbled queso fresco if desired.

  • For a spicier version, add diced jalapeños or a dash of hot sauce.
