Description

A warm, comforting soup featuring tender chicken, earthy mushrooms, and nutty wild rice, perfect for chilly evenings.


Ingredients

  • 1 cup wild rice
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the wild rice according to package instructions. Set aside.
  2. In a large pot, heat olive oil over medium heat. Add diced onion and garlic, and sauté until translucent.
  3. Add sliced mushrooms and cook until softened.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in cooked chicken and cooked wild rice.
  6. Lower heat and add heavy cream. Cook until heated through.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with fresh parsley.
