Ingredients
- 1 cup wild rice
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the wild rice according to package instructions. Set aside.
- In a large pot, heat olive oil over medium heat. Add diced onion and garlic, and sauté until translucent.
- Add sliced mushrooms and cook until softened.
- Pour in chicken broth and bring to a boil.
- Stir in cooked chicken and cooked wild rice.
- Lower heat and add heavy cream. Cook until heated through.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley.
