Description

A quick and tasty Chicken Parmesan Pasta Skillet that combines tender chicken, pasta, and a rich tomato sauce topped with melted cheese.


Ingredients

  • 1 lb chicken breasts, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes (optional)
  • 8 oz penne pasta
  • 2 cups mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and season with salt and pepper. Cook for 6-7 minutes until golden brown and fully cooked. Remove chicken from the skillet and set aside.
  2. In the same skillet, add chopped onion and cook for 3-4 minutes until softened. Add garlic and cook for 30 seconds, being careful not to burn.
  3. Stir in diced tomatoes, tomato sauce, Italian seasoning, and red pepper flakes (if using). Bring the mixture to a simmer and cook for 5 minutes.
  4. Add penne pasta and 1 1/2 cups of water. Stir well, bring to a boil, and reduce the heat to simmer. Cook for 10-12 minutes or until the pasta is tender and the water is mostly absorbed.
  5. Return the cooked chicken to the skillet and sprinkle with mozzarella and Parmesan cheeses. Cover and cook for an additional 3-4 minutes until the cheese has melted.
  6. Remove from heat, garnish with fresh basil or parsley, and serve immediately.

Notes

  • Feel free to adjust the level of red pepper flakes based on your spice preference.
  • This dish can be made ahead of time and reheated for a quick meal.
  • For a healthier option, you can use whole wheat pasta.
