Ingredients

  • 4 salmon fillets
  • 1 can coconut milk
  • 2 limes (juiced)
  • 1 teaspoon salt
  • 1 avocado (diced)
  • 1 mango (diced)
  • 1/4 red onion (finely chopped)
  • 1/2 cup cilantro (chopped)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix coconut milk, lime juice, and salt. Marinate salmon fillets in this mixture for at least 30 minutes.
  2. Meanwhile, prepare the avocado mango salsa by combining diced avocado, diced mango, red onion, cilantro, and olive oil in a bowl. Season with salt and pepper to taste.
  3. Preheat the grill or skillet over medium-high heat.
