Ingredients
- 4 salmon fillets
- 1 can coconut milk
- 2 limes (juiced)
- 1 teaspoon salt
- 1 avocado (diced)
- 1 mango (diced)
- 1/4 red onion (finely chopped)
- 1/2 cup cilantro (chopped)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a bowl, mix coconut milk, lime juice, and salt. Marinate salmon fillets in this mixture for at least 30 minutes.
- Meanwhile, prepare the avocado mango salsa by combining diced avocado, diced mango, red onion, cilantro, and olive oil in a bowl. Season with salt and pepper to taste.
- Preheat the grill or skillet over medium-high heat.
- Remove the salmon from the marinade and cook on the grill or skillet for about 4-5 minutes per side, or until cooked through and flaky.
- Serve the salmon topped with the avocado mango salsa.
