Ingredients

  • 1 cup fresh or frozen cranberries

  • 1/2 cup orange juice
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 egg
  • Zest of 1 orange

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and orange juice. Stir in the orange zest.
