Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup balsamic vinegar
- 1 large onion, sliced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt and pepper and brown them on both sides.
- Remove the chicken from the skillet and add the sliced onions. Sauté until they are soft and translucent.
- Add the sun-dried tomatoes and balsamic vinegar to the skillet, stirring well to combine.
- Return the chicken to the skillet and spoon the mixture over it.
- Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the chicken is cooked through.
- Remove the skillet from the oven, stir in the heavy cream, and let it simmer for a few minutes until the sauce thickens.
- Garnish with fresh basil before serving.

For a lighter option, consider using coconut cream or a non-dairy alternative.
