Description

A comforting dish featuring tender chicken breasts in a creamy balsamic sauce, complemented by roasted onions and sun-dried tomatoes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup balsamic vinegar
  • 1 large onion, sliced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt and pepper and brown them on both sides.
  3. Remove the chicken from the skillet and add the sliced onions. Sauté until they are soft and translucent.
  4. Add the sun-dried tomatoes and balsamic vinegar to the skillet, stirring well to combine.
  5. Return the chicken to the skillet and spoon the mixture over it.
  6. Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the chicken is cooked through.
  7. Remove the skillet from the oven, stir in the heavy cream, and let it simmer for a few minutes until the sauce thickens.
  8. Garnish with fresh basil before serving.
