Ingredients

  • 2 cups frozen corn
  • 2 medium russet potatoes, peeled and diced
  • 1 chipotle pepper in adobo sauce, diced
  • 2 tbsp adobo sauce
  • 1 lb chicken breast, boneless, skinless
  • 6 cups chicken broth
  • 8 oz cream cheese or crème fraîche
  • 6 slices of bacon
  • 2 limes, optional garnish
  • Fresh cilantro, optional garnish
  • ½ cup crumbled cotija cheese, optional garnish

Instructions

  1. Heat oil in a large pan over medium heat. Sauté onion, poblano/jalapeño, and garlic for 3 minutes until fragrant.
  2. Stir in chili powder and cumin, cook for an additional 2-3 minutes.
  3. Transfer sautéed mixture to a slow cooker. Add frozen corn, diced potatoes, chipotle pepper, adobo sauce, chicken breast, and chicken broth.
  4. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. In the last 30 minutes of cooking, stir in cream cheese or crème fraîche until fully incorporated.
  6. Cook bacon until crispy using your preferred method (stovetop or oven).
  7. Serve soup hot, garnished with crumbled bacon, cotija cheese, lime juice, and cilantro if desired. Adjust salt and pepper to taste.
