  • 1/2 teaspoon ground cinnamon
  • 1/4 cup toasted shredded coconut (optional topping)
  • 1/4 cup chopped nuts (cashews or almonds, optional topping)
  • 1/2 cup fresh tropical fruits (mango or pineapple, optional topping)

Instructions

  1. Rinse medium-grain rice under cold water until clear to remove excess starch.
  2. In a medium saucepan, stir together coconut milk, whole milk, rice, sugar, and salt.
  3. Heat over medium flame until mixture reaches a gentle simmer, stirring frequently.
  4. Reduce heat to low; cook gently, stirring every few minutes for 25–30 minutes until rice is tender and pudding is thick and velvety.
  5. Remove from heat, then stir in vanilla extract and ground cinnamon.
