Description
A refreshing and creamy cucumber salad featuring a tangy Greek yogurt dressing, perfect for a light side dish.
Ingredients
- For the Salad:
- 2 cups Persian Cucumbers
- 1 medium Red Onion
- For the Dressing:
- 1 cup Plain Greek Yogurt
- 2 tablespoons Olive Oil
- 2 tablespoons Lemon Juice
- 1 clove Garlic
- 1 tablespoon Fresh Dill
- Salt to taste
- Black Pepper to taste
Instructions
- Make the Dressing: In a bowl, combine plain Greek yogurt, freshly minced garlic, chopped dill, lemon juice, olive oil, salt, and black pepper. Mix until well blended and creamy.
- Prepare Vegetables: Thinly slice your Persian cucumbers and red onion. A mandolin slicer can make this process easier and give you perfect, uniform slices.
- Toss Salad: In a large mixing bowl, add the sliced cucumbers and red onion. Pour the prepared dressing over them, and gently toss until everything is well coated and the flavors meld.
- Serve: Dig in and enjoy immediately for the freshest taste and texture! Optional: Garnish with additional dill.
Notes
- Serve fresh as the flavors meld beautifully and the salad keeps its crunch.
- Re-toss any leftovers before serving again.
- Persian cucumbers are ideal, but English cucumbers can be used as a substitute.
- Garlic powder can be used as a substitute for fresh garlic.
- Feel free to add more fresh dill if you love dill!
