Ingredients
3 chicken breasts
Salt and black pepper to taste
2 tablespoons olive oil
1 tablespoon butter
4–5 cloves garlic, minced
1 onion, finely chopped
Juice of 1 lemon
1 cup chicken broth or water
Instructions
-
Prepare the Chicken
Pat the chicken breasts dry and season both sides with salt and black pepper. -
Sear the Chicken
Heat olive oil in a large skillet over medium-high heat.
Add chicken breasts and sear 5–7 minutes per side until golden and cooked through.
Remove from skillet and set aside. -
Sauté the Aromatics
In the same skillet, melt butter over medium heat.
Add garlic and onion, cooking for about 5 minutes until soft and fragrant. -
Create the Sauce
Pour in lemon juice and chicken broth. Stir and scrape any browned bits from the pan.
Simmer for 5 minutes to reduce slightly. -
Combine and Cook
Return the chicken to the skillet.
Spoon sauce over the top and simmer on low for 5–10 minutes until warmed through and sauce thickens slightly. -
Serve
Garnish with fresh herbs (optional). Serve hot with sides like mashed potatoes, rice, or veggies.
Notes
-
For extra creaminess, add 1/4 cup heavy cream or a spoon of crème fraîche to the sauce.
-
Deglaze the pan well to incorporate all the rich, seared flavor.
-
Add fresh herbs like thyme or parsley for an herbal note.
-
Use a meat thermometer to ensure chicken reaches 165°F (74°C) internally.
-
Great for meal prep—just store and reheat gently with a splash of broth.
