Description
Make creamy garlic chicken pasta with tender chicken, rich sauce, and al dente pasta. A perfect comfort food recipe in under 45 minutes.
Ingredients
For the Chicken:
-
2 boneless, skinless chicken breasts (sliced or cubed)
-
1 tbsp olive oil
-
1 tbsp butter
-
1/2 tsp garlic powder
-
1/2 tsp Italian seasoning
-
Salt and pepper, to taste
For the Pasta & Sauce:
-
8 oz fettuccine or penne pasta
-
2 tbsp butter
-
6 cloves garlic, minced
-
1 cup heavy cream
-
1/2 cup chicken broth (or reserved pasta water)
-
1 cup grated Parmesan cheese
-
1/4 tsp red pepper flakes (optional)
-
Salt and black pepper, to taste
-
Fresh parsley, chopped (for garnish)
Instructions
-
Cook the pasta in salted boiling water until al dente. Drain and set aside. Reserve ½ cup pasta water.
-
Season the chicken with garlic powder, Italian seasoning, salt, and pepper.
-
Heat oil and butter in a large skillet over medium heat. Add chicken and cook 4–6 minutes, until golden and cooked through. Remove from pan.
-
In the same skillet, melt butter and sauté minced garlic for 1 minute until fragrant.
-
Add heavy cream and chicken broth. Stir well and bring to a gentle simmer.
-
Stir in Parmesan, red pepper flakes, salt, and pepper. Let the sauce thicken slightly (about 2–3 minutes).
-
Return chicken to the skillet. Add cooked pasta and toss to coat. Add reserved pasta water if needed to loosen the sauce.
-
Serve warm, topped with fresh parsley and more Parmesan if desired.
Notes
-
Use freshly grated Parmesan for the smoothest sauce texture.
-
Avoid boiling the cream—simmer gently to prevent curdling.
-
Don’t overcook chicken—it should be just done to stay juicy.
-
Use pasta water to adjust sauce consistency naturally.
-
Add-ins like spinach, sun-dried tomatoes, or mushrooms can boost nutrition and flavor.
-
Leftovers reheat best on the stovetop with a splash of milk or broth.
