Ingredients
- 2 cups fresh mushrooms (button, cremini, shiitake, or mixed)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 4 cups vegetable or chicken broth
- 1 cup heavy cream or full-fat coconut milk
- 1 teaspoon fresh thyme leaves or 1 tablespoon fresh parsley, chopped
- Salt, to taste
- Black pepper, to taste
Instructions
- Heat butter and olive oil in a large pot over medium heat. Add the finely chopped onions and minced garlic. Cook for 3-5 minutes until soft and fragrant.
- Add cleaned and sliced mushrooms to the pot. Stir frequently and cook for 8-10 minutes until they release their juices and begin to brown.
- Pour in the vegetable or chicken broth and stir to combine. Bring to a gentle simmer and cook for 10-15 minutes.
- Use an immersion blender directly in the pot to puree the soup until smooth and velvety.
- Lower the heat and stir in the heavy cream or chosen alternative. Season with salt and pepper to taste. Warm through gently for a few minutes.
