Ingredients

  • 2 cups fresh mushrooms (button, cremini, shiitake, or mixed)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or full-fat coconut milk
  • 1 teaspoon fresh thyme leaves or 1 tablespoon fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Heat butter and olive oil in a large pot over medium heat. Add the finely chopped onions and minced garlic. Cook for 3-5 minutes until soft and fragrant.
  2. Add cleaned and sliced mushrooms to the pot. Stir frequently and cook for 8-10 minutes until they release their juices and begin to brown.
  3. Pour in the vegetable or chicken broth and stir to combine. Bring to a gentle simmer and cook for 10-15 minutes.
  4. Use an immersion blender directly in the pot to puree the soup until smooth and velvety.
  5. Lower the heat and stir in the heavy cream or chosen alternative. Season with salt and pepper to taste. Warm through gently for a few minutes.
