Description
A comforting and creamy soup made with gnocchi, Italian sausage, and fresh vegetables.
Ingredients
- 1 package gnocchi
- 1 lb Italian sausage (mild or spicy)
- 2 cups fresh spinach
- 1 cup carrots, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 4 cups chicken or vegetable broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Brown the sausage: Heat a large pot over medium heat. Add the sausage and cook, breaking it up as it browns. Drain any excess fat and set aside.
- Sauté the vegetables: In the same pot, sauté the garlic and carrots for about 3 minutes, until tender.
- Add the broth: Pour in the broth and bring the mixture to a simmer.
- Cook the gnocchi: Add the gnocchi and cook for 2-3 minutes, or until they float to the top.
- Stir in spinach and cream: Add the spinach and heavy cream, letting the spinach wilt and the cream thicken the soup.
- Add the sausage back: Return the cooked sausage to the pot and stir in the thyme, salt, and pepper. Let the soup simmer for 5 minutes.
- Serve: Serve hot, garnished with extra herbs or Parmesan if desired.
Notes
- Feel free to adjust the spice level by choosing mild or spicy sausage.
- For a lighter version, you can substitute half-and-half for heavy cream.
- This soup can be stored in the refrigerator for up to 3 days.
