Ingredients
- 1 lb lean ground beef
- 1 packet (1 oz) taco seasoning
- 1/4 cup water or beef broth
- 1 cup refried beans (optional)
- 2 cups cooked Mexican rice
- 4 burrito-sized flour tortillas
- 2 cups Fritos or Doritos
- 1 cup warmed cheese dip
- 1 cup shredded Mexican cheese blend
- 1/2 cup sour cream
Instructions
- Cook ground beef in a skillet over medium heat until browned. Drain excess fat.
- Stir in taco seasoning and water or broth. Simmer for 1-2 minutes. If using refried beans, stir them in now.
- Prepare Mexican rice according to package directions or warm cooked rice.
- Warm flour tortillas in a microwave for 30 seconds or in a dry skillet for 15-20 seconds per side until pliable.
- Lay a tortilla flat. Layer with beef mixture, rice, Fritos or Doritos, cheese dip, shredded cheese, and sour cream.
- Fold in the sides of the tortilla, then roll tightly from one end.
- Optional: For a crispy exterior, place burritos seam-side down in a skillet over medium heat and toast until lightly browned and slightly crunchy.
- Slice burritos in half and serve immediately.
