Description

These Crispy Loaded Taco Burritos are a handheld fiesta, blending seasoned beef, creamy cheese, fluffy rice, and the satisfying crunch of chips. They’re a quick, family-friendly meal perfect for a busy weeknight, offering a delightful mix of textures and bold flavors.

Ingredients

  • 1 lb lean ground beef
  • 1 packet (1 oz) taco seasoning
  • 1/4 cup water or beef broth
  • 1 cup refried beans (optional)
  • 2 cups cooked Mexican rice
  • 4 burrito-sized flour tortillas
  • 2 cups Fritos or Doritos
  • 1 cup warmed cheese dip
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup sour cream

Instructions

  1. Cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  2. Stir in taco seasoning and water or broth. Simmer for 1-2 minutes. If using refried beans, stir them in now.
  3. Prepare Mexican rice according to package directions or warm cooked rice.
  4. Warm flour tortillas in a microwave for 30 seconds or in a dry skillet for 15-20 seconds per side until pliable.
  5. Lay a tortilla flat. Layer with beef mixture, rice, Fritos or Doritos, cheese dip, shredded cheese, and sour cream.
  6. Fold in the sides of the tortilla, then roll tightly from one end.
  7. Optional: For a crispy exterior, place burritos seam-side down in a skillet over medium heat and toast until lightly browned and slightly crunchy.
  8. Slice burritos in half and serve immediately.

Notes

  • Do not overstuff tortillas to ensure they roll and hold together better.
  • For a spicier kick, add jalapeños, hot sauce, or spicy chips.
  • For a lighter option, use ground turkey and baked tortilla chips.
  • For a vegetarian version, omit beef and use extra beans or grilled vegetables.
  • Mini versions can be made for appetizers.
