Description

A delicious and easy-to-make dessert featuring a combination of fresh or frozen peaches and blueberries, topped with a sweet cobbler dough, all cooked in a slow cooker.


Ingredients

  • 5 cups fresh or frozen peaches, peeled and sliced if fresh (about 5 large peaches)
  • 3 cups fresh or frozen blueberries
  • 3 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour, or white whole wheat flour
  • ⅓ cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 5 tablespoons cold unsalted butter, cut into small cubes
  • ⅓ cup buttermilk

Instructions

  1. Combine peaches, blueberries, sugar, cornstarch, and vanilla in a large bowl. Stir and then set aside.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. Cut in the butter until it resembles small peas.
  3. Pour in the buttermilk and mix with a fork until the dough comes together.
  4. Lightly spray the bottom of the slow cooker with cooking spray. Crumble the dough evenly over the bottom of the slow cooker.
  5. Stir the fruit mixture to ensure everything is well combined and then spread it in an even layer on top of the dough.
  6. Cover and cook on high for 2 ½ to 3 hours or on low for 4 to 5 hours, until the filling is hot and bubbly.
  7. Let the cobbler rest for 20 to 30 minutes. Serve warm, with ice cream if desired.
