Description

  • 1/4 cup Granulated Sugar (Honey or maple syrup can be used but will alter texture)
  • 1 large Egg (Substitute with a flax egg for a vegan option)
  • 1 teaspoon Vanilla Extract (Opt for pure extract for best quality)
  • 1 cup Chocolate Chips (Dark chocolate makes a richer cookie)
  • 1 cup Mini Marshmallows (Optional; adds extra gooeyness)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the Rice Krispies, flour, baking soda, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  4. Add the egg and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips and mini marshmallows if using.
  7. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
