- 1/4 cup Granulated Sugar (Honey or maple syrup can be used but will alter texture)
- 1 large Egg (Substitute with a flax egg for a vegan option)
- 1 teaspoon Vanilla Extract (Opt for pure extract for best quality)
- 1 cup Chocolate Chips (Dark chocolate makes a richer cookie)
- 1 cup Mini Marshmallows (Optional; adds extra gooeyness)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the Rice Krispies, flour, baking soda, and salt.
- In another bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Add the egg and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips and mini marshmallows if using.
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
