Ingredients

  • 2 medium Zucchini sliced in half lengthwise
  • 1 tablespoon Extra Virgin Olive Oil for drizzling

  • to taste Pepper
  • 1 pound Ground Turkey lean protein choice
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 packet Taco Seasoning
  • 1 cup Tomato Salsa your favorite flavor
  • 1 cup Shredded Cheddar or Mexican Cheese for topping
  • to taste Optional Taco Toppings like avocado, sour cream, lime, fresh tomatoes, or cilantro

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with cooking spray.
  2. Clean the zucchini and slice each in half lengthwise, scooping out the insides.
  3. Spray the insides of the zucchini halves with olive oil, and season with salt and pepper.
  4. In a skillet over medium heat, add olive oil and cook the ground turkey until browned, about 5-7 minutes.
  5. Add chopped onion and minced garlic to the turkey, sauté for 2 minutes.
  6. Stir in taco seasoning and salsa, cooking for 1-2 minutes.
  7. Stuff the turkey mixture into the zucchini halves.
  8. Bake the zucchini boats for 20 minutes, sprinkle cheese on top, and bake for another 5 minutes.
