Ingredients
- 2 medium Zucchini sliced in half lengthwise
- 1 tablespoon Extra Virgin Olive Oil for drizzling

- 1 pound Ground Turkey lean protein choice
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 packet Taco Seasoning
- 1 cup Tomato Salsa your favorite flavor

Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with cooking spray.
- Clean the zucchini and slice each in half lengthwise, scooping out the insides.
- Spray the insides of the zucchini halves with olive oil, and season with salt and pepper.
- In a skillet over medium heat, add olive oil and cook the ground turkey until browned, about 5-7 minutes.
- Add chopped onion and minced garlic to the turkey, sauté for 2 minutes.
- Stir in taco seasoning and salsa, cooking for 1-2 minutes.
- Stuff the turkey mixture into the zucchini halves.
- Bake the zucchini boats for 20 minutes, sprinkle cheese on top, and bake for another 5 minutes.
- Let cool slightly, then top with optional garnishes before serving.
