This easy no-bake cheesecake is smooth, creamy, and ready in minutes—no oven required. The ultimate chilled dessert for any season.


Ingredients

For the Crust:

  • 2 cups graham cracker crumbs

  • 1/2 cup melted unsalted butter

  • 2 tablespoons sugar

For the Filling:

  • 16 oz (2 blocks) cream cheese, at room temperature

  • 1 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 tablespoon lemon juice (optional)

  • 1 1/2 cups heavy whipping cream, cold

Optional Toppings:

  • Fresh berries or fruit compote

  • Chocolate ganache

  • Crushed Oreos or cookies

  • Lemon curd or caramel drizzle


Instructions

  • Prepare the crust:
    In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a 9-inch springform pan. Chill for 15 minutes.

  • Make the filling:
    In a large bowl, beat the cream cheese until smooth. Add powdered sugar, vanilla, and lemon juice, and mix until creamy. In a separate bowl, whip cold heavy cream to stiff peaks. Gently fold whipped cream into the cream cheese mixture.

  • Assemble:
    Spread the filling over the chilled crust. Smooth the top with a spatula. Cover and refrigerate for at least 6 hours, preferably overnight.

 

  • Serve:
    Remove from pan, add toppings of choice, and slice with a clean knife.
