Instructions

In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a 9-inch springform pan. Chill for 15 minutes. -

In a large bowl, beat the cream cheese until smooth. Add powdered sugar, vanilla, and lemon juice, and mix until creamy. In a separate bowl, whip cold heavy cream to stiff peaks. Gently fold whipped cream into the cream cheese mixture. -
Assemble:
Spread the filling over the chilled crust. Smooth the top with a spatula. Cover and refrigerate for at least 6 hours, preferably overnight.
