Description

A simple and delicious sheet pan recipe featuring kielbasa and a variety of colorful vegetables, perfect for a quick weeknight dinner.


Ingredients

  • 1 pound kielbasa, sliced into rounds
  • 2 cups bell peppers, chopped (mix of colors)
  • 1 cup zucchini, sliced
  • 1 cup red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice kielbasa and chop the vegetables; place them in a large bowl.
  3. Drizzle olive oil over the kielbasa and veggies. Sprinkle garlic powder, smoked paprika, salt, and pepper on top. Toss to coat.
  4. Spread the mixture onto a large sheet pan in an even layer.
  5. Bake for about 20-25 minutes until vegetables are tender and caramelized, and kielbasa is heated through.
  6. Remove from oven and allow to cool for a few minutes before serving.
