A simple and delicious sheet pan recipe featuring kielbasa and a variety of colorful vegetables, perfect for a quick weeknight dinner.
Ingredients
- 1 pound kielbasa, sliced into rounds
- 2 cups bell peppers, chopped (mix of colors)
- 1 cup zucchini, sliced
- 1 cup red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- to taste salt and pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Slice kielbasa and chop the vegetables; place them in a large bowl.
- Drizzle olive oil over the kielbasa and veggies. Sprinkle garlic powder, smoked paprika, salt, and pepper on top. Toss to coat.
- Spread the mixture onto a large sheet pan in an even layer.
- Bake for about 20-25 minutes until vegetables are tender and caramelized, and kielbasa is heated through.
- Remove from oven and allow to cool for a few minutes before serving.
Notes
- Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for 2-3 months.
