Ingredients
- 1 package of English muffins
- 8 eggs
- 1 lb breakfast sausage
- 8 oz mild cheddar cheese, thinly sliced
- 2 cups milk
- ¼ cup sausage drippings (add butter if needed)
- ¼ cup flour
- ½ teaspoon salt (or to taste)
- ¼ teaspoon pepper (or to taste)
Instructions
- Start by browning the breakfast sausage in a cast iron skillet over medium heat. Once fully cooked, remove the sausage from the pan and set it aside. Keep about ¼ cup of the drippings in the pan (if you don’t have enough, add a little butter to make up the difference).
- To the reserved fat in the skillet, add the flour and cook over medium heat for 5-10 minutes, stirring constantly, until the mixture turns golden brown. Slowly add the milk while whisking continuously to prevent lumps. Continue cooking until the gravy thickens. Season with salt and pepper to taste, then remove from heat.
- While the gravy is thickening, lightly toast the English muffins to give them a bit of crunch. This helps prevent them from getting soggy when you add the toppings.
- In a separate pan, scramble the eggs. For extra fluffy eggs, add a small dash of milk and whisk before cooking. Cook over low heat, stirring gently until just set.
- Preheat your oven broiler to high. Place the toasted English muffins on a baking sheet. Spread a generous layer of sawmill gravy on each half, followed by scrambled eggs, a slice of cheddar cheese, and crumbled sausage.
- Place the baking sheet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye on them to prevent burning.
- Remove from the oven and serve immediately. Pair with a side of fresh fruit or a hot cup of coffee for the ultimate breakfast experience.
