Ingredients
- 1 cup pumpkin puree
- 3 eggs
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine pumpkin puree, eggs, honey or maple syrup, and mix well.
- Add almond flour, cinnamon, baking soda, and salt to the mixture and stir until fully combined.
- If desired, fold in chocolate chips.
- Divide the batter evenly among the muffin cups.
- Bake for about 20-25 minutes, or until a toothpick comes out clean.
- Let cool before serving.
