Ingredients
- 1 cup cottage cheese
- 3 large eggs
- 1/4 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- Optional seasonings (e.g., herbs, garlic powder)
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a mixing bowl, blend the cottage cheese and egg yolks until smooth.
- In a separate bowl, beat the egg whites with the cream of tartar until stiff peaks form.
- Gently fold the egg whites into the cottage cheese mixture.
- Add salt, baking powder, and any optional seasonings, folding until just combined.
- Scoop the mixture onto the prepared baking sheet, forming 4-6 rounds.
- Bake for 25-30 minutes, or until the edges are golden and the bread is set.
- Remove from the oven and let cool slightly before serving.
Notes
Customize with herbs for savory or sweeten with honey for breakfast. Cloud bread also makes a great sandwich base.
