Description

Learn how to make fluffy soft eggs over crispy garlic toast—an easy, elegant breakfast or brunch ready in minutes with bold flavor.

Ingredients

For the Fluffy Soft Eggs:

  • 4 large eggs

  • 2 tablespoons whole milk or cream (optional)

  • Salt and black pepper, to taste

  • 1 tablespoon unsalted butter

For the Crispy Garlic Toast:

  • 24 slices of rustic bread (sourdough, ciabatta, or country bread)

  • 2 tablespoons olive oil or butter

  • 1 clove garlic, halved

  • Pinch of salt

Optional Toppings:

  • Chopped herbs (chives, parsley, dill)

  • Grated cheese (cheddar, Parmesan, Gruyère)

  • Sliced avocado or tomatoes

  • Red pepper flakes or hot sauce

Instructions

  • Whisk the eggs: In a bowl, beat eggs with milk or cream (if using), salt, and pepper until well combined and slightly frothy.

  • Make garlic toast: Brush both sides of the bread with olive oil or butter. Toast in a hot skillet or oven until golden and crisp. Rub with garlic while warm and sprinkle with salt.

  • Cook the eggs: Melt butter in a nonstick pan over low heat. Pour in eggs and stir slowly and continuously with a spatula. Cook gently, forming soft curds. Remove from heat when just set.

  • Assemble: Place toast on plates, top with fluffy eggs, and finish with your favorite toppings. Serve immediately.

Notes

  • Cook eggs low and slow for the softest, fluffiest texture.

  • Toast the bread well—the crunch balances the creamy eggs.

  • Don’t overcook the eggs—they should still be slightly runny when removed from heat.

  • Use quality bread for best flavor and structure.

  • Add fresh herbs or cheese for extra richness and color.
