Description

Ingredients

  • 1 cup plain Greek yogurt or regular yogurt

  • 3 large eggs

  • 3/4 cup granulated sugar

  • 1/2 cup vegetable oil or melted butter

  • 1 teaspoon vanilla extract

  • 1 1/2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • Zest of 1 lemon or orange (optional)

Optional toppings or add-ins:

  • Fresh berries, chocolate chips, or chopped nuts

  • Powdered sugar, yogurt glaze, or whipped cream


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round or loaf pan, or line with parchment paper.

  2. Whisk wet ingredients: In a large mixing bowl, combine yogurt, eggs, sugar, oil, vanilla extract, and zest. Mix until smooth.

  3. Combine dry ingredients: In another bowl, sift together flour, baking powder, baking soda, and salt.

  4. Mix the batter: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.

  5. Bake: Pour the batter into the prepared pan. Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.

  6. Cool: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  7. Serve: Dust with powdered sugar or top with your favorite glaze, fruits, or whipped cream.
