Description

This French Onion Chicken & Rice recipe combines savory caramelized onions, tender chicken, and creamy rice for a comforting meal.


Ingredients

  • 3 tablespoons butter, divided
  • 3 tablespoons extra virgin olive oil, divided
  • 3 pounds sweet onion, cut in half and sliced
  • 1 tablespoon fresh garlic, minced
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon dry tarragon
  • 1 teaspoon dry thyme
  • 1/3 cup brandy or white wine
  • 1 tablespoon Worcestershire sauce
  • 8 ounces button mushrooms, sliced
  • 1 ½ cups white uncooked rice
  • 2 cups baby spinach, packed
  • 3 cups chicken stock
  • 1 cup heavy cream
  • 34 cups cooked chicken, torn into bite-sized pieces
  • 4 ounces Gruyere Swiss cheese, shredded

Instructions

  1. Melt two tablespoons of the butter with two tablespoons of the oil in a large nonstick high sided skillet over medium low heat.
  2. Add sliced onions to the pan and cook untouched for 15 minutes.
  3. Stir and cook for another 15 minutes, gauging caramelization.
  4. If needed, cook for another 10-15 minutes.
  5. Turn heat to medium, add garlic, and cook for one minute.
  6. Add salt, pepper, tarragon, and thyme; cook for one minute.
  7. Add brandy off heat and cook until liquid evaporates, about five minutes.
  8. Stir in Worcestershire sauce and remove from heat.
  9. In a medium pot over medium high heat, add mushrooms and cook until browned, about 5-10 minutes.
  10. Add remaining butter and oil; once melted, add rice and cook for five minutes.
  11. Add spinach and wilt for about one minute.
  12. Add stock, bring to a simmer, lower heat, cover, and cook for 15 minutes.
  13. Remove lid, stir in cream and chicken, and heat just to hot.
  14. Pour rice mixture into a sprayed casserole dish and top with cooked onions.
  15. Add shredded cheese and broil until melted and bubbly.
  16. Serve immediately.

  • This dish is perfect for weeknight dinners.
  • You can use rotisserie chicken for convenience.
