Description

Crispy on the outside, savory inside—these fried potato cakes with minced meat filling are perfect for lunch, dinner, or snacking.

Ingredients

For the Potato Dough:

  • 4 cups cold mashed potatoes

  • 1 egg

  • 1/2 cup all-purpose flour (plus more for shaping)

  • Salt and black pepper, to taste

For the Minced Meat Filling:

  • 1 tbsp oil or butter

  • 1 small onion, finely chopped

  • 1 garlic clove, minced

  • 1/2 lb (225g) ground beef or turkey

  • Salt and pepper, to taste

  • Optional: cumin, paprika, chili flakes, fresh parsley

For Frying:

  • Vegetable oil (for shallow frying)

Instructions

  • Prepare the filling: Heat oil in a skillet, sauté onion and garlic until soft. Add ground meat, season, and cook until browned and moisture is gone. Let cool.

  • Make potato dough: In a bowl, mix mashed potatoes, egg, flour, salt, and pepper. Mix until smooth and dough-like. Add a bit more flour if too sticky.

  • Shape the cakes: Scoop about 1/4 cup of potato dough, flatten into a disc. Place 1–2 teaspoons of meat filling in the center. Fold edges around filling and shape into a sealed patty. Dust lightly with flour.

  • Fry: Heat oil in a nonstick or cast-iron skillet over medium heat. Fry patties 3–4 minutes per side until golden and crispy. Work in batches.

  • Drain & serve: Remove to a paper towel-lined plate to drain. Serve warm with your favorite dip or side.

Notes

  • Use chilled mashed potatoes—they form firmer dough.

  • Let filling cool before assembling to avoid sogginess.

  • Seal patties tightly to prevent leaks during frying.

  • Test-fry one cake first to adjust seasoning or texture.

  • Serve with dips like sour cream, garlic yogurt, or spicy ketchup.
