Ingredients
- 2 ripe mangoes, peeled, pitted, and chopped
- 1 cup Greek yogurt (plain or vanilla)
- 2 tablespoons honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1/2 cup granola
- 1/4 cup shredded coconut (optional)
- 1/2 cup mixed nuts, chopped (optional)
- A pinch of salt
Instructions
- In a blender, combine mangoes, Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Blend until smooth and creamy.
- In a large bowl, mix rolled oats, granola, shredded coconut, and chopped nuts until combined.
- Pour the mango-yogurt mixture over the dry ingredients and stir until everything is evenly coated.
- Line a baking sheet with parchment paper and scoop small portions (about 1.5-inch rounds) onto it. Flatten slightly for even freezing.
- Freeze for at least 4 hours, or until completely solid.
- Once frozen, individually wrap rounds or store them in an airtight container in the freezer.
- Serve directly from the freezer for a quick, refreshing snack.
