  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups Fruity Pebbles cereal (plus extra for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine milk, melted butter, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in Fruity Pebbles cereal.
  6. Divide the batter evenly among muffin cups, filling each about 3/4 full. Sprinkle extra cereal on top for a colorful finish.
  7. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
