Description

Indulge in a heavenly dessert that combines fudgy brownies and chewy cookies for a unique treat.


Ingredients

  • 95 g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster or granulated sugar
  • 90 g Demerara or raw sugar
  • 1 teaspoon vanilla
  • 85 g dark or milk chocolate chips

Instructions

  1. Preheat the oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating and line a baking tray with parchment paper.
  2. Melt chocolate and butter in a heatproof bowl over simmering water. Stir in vanilla extract.
  3. In another bowl, whip eggs and sugars with an electric whisk until light and fluffy.
  4. Sift together flour, cocoa powder, baking powder, and salt in a separate bowl, then add chocolate chips.
  5. Fold the chocolate mixture into the whipped egg mixture, then gently fold in the dry ingredients until just combined.
  6. Scoop tablespoons of batter onto the prepared tray and bake for 12-14 minutes.
  7. Sprinkle with sea salt if desired and let cool on the tray for 10 minutes before transferring to a cooling rack.

Notes

Store Browkies in an airtight container at room temperature for up to a week. They can be frozen for up to three months.
