Ingredients
- 4 chicken thighs
- 4 medium potatoes, diced
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese

- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the diced potatoes, olive oil, garlic, oregano, salt, and pepper.
- Spread the potato mixture in a single layer on a baking sheet.
- Season the chicken thighs with salt and pepper, then place them on top of the potatoes.
