Description

A delightful medley of spices and sweetness, these German gingerbread cookies, or Lebkuchen, are perfect for festive occasions.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup molasses
  • 1 egg
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar (for icing, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the molasses and egg until well combined.
  4. In another bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  6. Chill the dough for at least 30 minutes.
  7. Roll out the dough on a floured surface to about 1/4 inch thick.
  8. Cut into desired shapes and place on a lined baking sheet.
  9. Bake for 10-12 minutes or until the edges are firm.
  10. Allow to cool before icing with powdered sugar if desired.

Notes

You can enhance the spice flavor by adjusting the amounts of ginger, cinnamon, and cloves to your taste. Icing is optional but adds a nice touch.
