Description

A classic recipe for Grandma’s Oatmeal Cake, known for its moist texture and rich flavor.

Ingredients

  • 1 cup rolled oats
  • 1 cup boiling water
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a bowl, combine the rolled oats and boiling water. Let it sit for about 20 minutes to soften.
  3. In a separate bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  4. Add the softened oats to the wet ingredients and stir until combined.
  5. In another bowl, sift together the flour, baking soda, baking powder, salt, and cinnamon.
  6. Gradually add the flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix!
  7. Pour the batter into the prepared baking pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Once baked, let the cake cool completely before adding your favorite cream cheese frosting or simply dusting with powdered sugar.
