- 1 cup rolled oats
- 1 cup boiling water
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a bowl, combine the rolled oats and boiling water. Let it sit for about 20 minutes to soften.
- In a separate bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
- Add the softened oats to the wet ingredients and stir until combined.
- In another bowl, sift together the flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Pour the batter into the prepared baking pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, let the cake cool completely before adding your favorite cream cheese frosting or simply dusting with powdered sugar.
