Ingredients

- 3 medium Carrots (substitute with parsnips or sweet potatoes)
- 2 medium Potatoes (Yukon Gold or russets)
- 2 medium Parsnips (replace with more carrots)
- 2 stalks Celery (leeks can be a substitute)
- 2 tablespoons Tomato Paste
- 1 teaspoon Dried Thyme (fresh thyme can substitute 3:1 ratio)
- 1 teaspoon Dried Rosemary
- 1 Bay Leaf
- Salt to taste
- Pepper to taste
- 2 tablespoons Fresh Parsley (for garnish)
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides, about 4-5 minutes. Remove and set aside.
- In the same pot, add diced onion and minced garlic. Sauté until onion is translucent, about 3-4 minutes.
- Stir in tomato paste and cook for 1 minute to caramelize.
- Pour in a splash of beef broth, scraping up browned bits from the pot.
- Add the browned beef back into the pot with the remaining broth.
- Add sliced carrots, potatoes, parsnips, and celery. Mix well.
- Stir in thyme, rosemary, bay leaf, salt, and pepper.
- Bring the mixture to a boil, then reduce heat, cover, and simmer for 2 hours, or until beef is fork-tender. Stir occasionally.
- Taste and adjust seasoning. Discard the bay leaf before serving.
- Serve hot, topped with fresh parsley.
