Description

Guilt-free churro bites made healthier with an air fryer, using almond and coconut flour for a delightful treat.


Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup erythritol or any sweetener of choice
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • Cinnamon and sugar mix for dusting

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a mixing bowl, combine almond flour, coconut flour, sweetener, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together eggs, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Shape the dough into small bites or balls.
  6. Place the bites in the air fryer basket in a single layer.
  7. Air fry for 8-10 minutes or until golden brown, shaking the basket halfway through.
  8. Allow to cool slightly, then roll in the cinnamon and sugar mix before serving.
