Ingredients
- 1 cup almond flour
- 1/2 cup coconut flour
- 1/4 cup erythritol or any sweetener of choice
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 large eggs
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- Cinnamon and sugar mix for dusting
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a mixing bowl, combine almond flour, coconut flour, sweetener, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together eggs, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Shape the dough into small bites or balls.
- Place the bites in the air fryer basket in a single layer.
- Air fry for 8-10 minutes or until golden brown, shaking the basket halfway through.
- Allow to cool slightly, then roll in the cinnamon and sugar mix before serving.
