Ingredients
- 1 cup rolled oats
- 1/2 cup pumpkin puree
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the rolled oats, pumpkin puree, honey or maple syrup, and almond butter until well combined.
- Add in the cinnamon, nutmeg, baking soda, and salt, and mix until fully incorporated.
- If desired, fold in the dark chocolate chips.
- Drop spoonfuls of the cookie dough onto a lined baking sheet.
- Bake for 12-15 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
