Ingredients

  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, pumpkin puree, honey or maple syrup, and almond butter until well combined.
  3. Add in the cinnamon, nutmeg, baking soda, and salt, and mix until fully incorporated.
  4. If desired, fold in the dark chocolate chips.
  5. Drop spoonfuls of the cookie dough onto a lined baking sheet.
  6. Bake for 12-15 minutes or until the edges are golden brown.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
