Warm up with hearty chicken noodle soup—a timeless, nourishing classic packed with flavor, tender chicken, and comforting noodles.
Ingredients
Main:
1 whole chicken (about 3–4 lbs) or 2 lbs bone-in chicken thighs
2 tablespoons olive oil or butter
1 large onion, diced
3 carrots, sliced
3 celery stalks, sliced
4 garlic cloves, minced
8 cups chicken broth (homemade or low-sodium)
2 bay leaves
1 teaspoon dried thyme (or 1 tablespoon fresh)
Salt and black pepper, to taste
2 cups egg noodles or pasta of choice
Fresh parsley or dill, chopped (for garnish)
Optional Add-ins:
1 cup peas or corn
1–2 cups chopped spinach or kale
Juice of 1 lemon (for brightness)
Instructions

Prep ingredients: Dice vegetables and set aside. Rinse and pat chicken dry.

Sauté aromatics: Heat oil in a large pot. Sauté onion, carrots, and celery for 5–7 minutes. Add garlic and cook 1 more minute.

Add chicken & broth: Add chicken, broth, bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce to a simmer.

Simmer & skim: Simmer uncovered for 30–40 minutes. Skim off any foam from the top.

Remove & shred chicken: Take chicken out and let cool slightly. Shred meat and discard skin/bones.

Add noodles: Return shredded chicken to pot. Add noodles and simmer 8–10 minutes until tender.

Finish & season: Stir in parsley or dill, taste, and adjust seasoning. Add lemon juice if desired.

Serve: Ladle hot into bowls and enjoy with crusty bread.
