Ingredients
2 tbsp oil for frying
1 onion, chopped
0.5 lb mushrooms, sliced
1 lb smoked sausage, sliced
3 cloves garlic, minced
0.5 lb pasta (penne, fusilli, or egg noodles)
2 tomatoes, diced
2 cups chicken broth
0.5 cup heavy cream
Salt, black pepper, and oregano, to taste
4 oz cheddar cheese, grated
Parsley for garnish (optional)
Instructions

Cook the Pasta

Boil pasta according to package instructions until al dente. Drain and set aside.

Sauté the Onion

Heat oil in a large pan over medium heat.

Add chopped onion and cook for 3–5 minutes until translucent.

Add Mushrooms and Sausage

Stir in mushrooms and cook for 5 minutes.

Add sausage slices and cook another 3–4 minutes until slightly browned.

Add Garlic and Tomatoes

Stir in minced garlic and cook 1 minute.

Add diced tomatoes and simmer for 2 minutes.

Make the Sauce

Pour in chicken broth and bring to a simmer.

Add heavy cream, salt, black pepper, and oregano. Simmer 3–4 minutes.

Combine with Pasta

Add cooked pasta and stir to coat in the sauce.

Sprinkle cheddar cheese over the pasta and mix until melted and creamy.

Serve and Garnish

Plate the pasta and garnish with chopped parsley if desired. Serve hot.
